Merry Berry Muffins

20140406-103343.jpgHello! It’s day light saving today and I earned an extra hour of sleep. Yeehaaa! Woke up as usual and had time to whip up some muffins. Win. I made these Fluffy lil ones with delicious strawberries blueberries and raspberries. Enjoyed these very much with a cuppa before work. The smell of them were so good, they even attracted by rice and bubbles 🐶

Trust me they are simple to make. It does not require egg mixer or beating! So here is the recipe:

What you need:

2.5 cup self raising flour
90g butter (I used meadowlea Cook and Bake Buttery)
3/4 cup or 165g sugar ( I replaced some with equal sugar)
310ml buttermilk
1 egg
200g Mixed berries (can be fresh or frozen)

Cake mixture with berries

How to:
1. Preheat oven to 180c. Grease 12 holes muffin pan
2. Sift flour into large bowl, rub in butter
3. Stir in sugar, buttermilk, egg – It should be lumpy
4. Add berries and stir gently
5. Spoon mixture into holes, bake for 20 mins, stand for 5 minutes before taking out


Nutritional Information (makes 12) based on recipe above:
Energy 1000kJ, 5g protein, 7.5g fat, carb 37g, sugar 16g, sodium 274mg
If replaced sugar with equal, the energy and carb content would be lower.

These muffins are quite low in fat content (similar to 1-2 tsp of spread). Looking at the whole cupcake, the nutrition content is pretty similar to eating 2 slices of bread with a tsp of jam and a tsp of spread. Of course it’d have less fibre and more sugar than toast. I like to eat half a muffin as afternoon snack plus a fruit. Good portion that satisfy my craves 😀
